Lemon Ginger Beet Juice Recipe

I love this natural sweet beet juice made with lettucefresh lemon, ginger and hydrating cucumber. It tastes incredible and is a great way to boost vitamin C and mineral intake.

For this beet juice recipe, we combine beets with lemon, ginger and cucumber. The beets are sweet and earthy, with soft light added by lemon and ginger, and the cucumber makes it super refreshing. So delicious, I can drink it every day!

Key Ingredients

  • beet: I like to turn beets into juices because they are filled with nutrients like folic acid, manganese, potassium, iron and vitamin C. Red or yellow beets work well.
  • lemon: Lemons are an important source of vitamin C and potassium. They also add a bright, fresh flavor that balances the beet’s dirt. Look for lemons that feel heavy on their size, which means they may have more juice.
  • ginger: Ginger fruit in ginger has anti-inflammatory effects and can promote healthy digestion. No need to peel, just scrub, slice and add to your juicer. Look for fresh ginger with smooth skin without any switches.
  • cucumber: The cucumber is super hydrating and adds a refreshing flavor to the juice. Choose cucumbers that are firm and have bright greens. I like English, hothouse or Persian cucumbers because they have thinner skin.

How to make my favorite beet juice

I love my Omega slow/cold press juicer (not sponsored, just something I have at home). If you have a juicer, you can push everything away and enjoy!

I put the peel on the beets and scrub them before trimming the tops. Then I cut the beet into small strips that were enough to fit the juicer. I also put the peel on the cucumber and ginger, but remove the peel and seeds of the lemon.

The following image shows that the pulp is very dry, which means we will get as much from agricultural products as possible.

One thing that surprised us when we first made juice at home was that the pulp really didn’t smell that much. If anything, it smells like dirt. If you have compost, be sure to throw the pulp into it.

If you don’t have a juicermix the ingredients in a high power mixer for 60 to 90 seconds. Then, filter it through a fine mesh filter before drinking.

Lemon Ginger Beet Juice

In this beet juice, the beet tastes sweet and earthy, with lemon and ginger added to diced cucumbers added with mineral-rich water. Beets are naturally sweet, so we don’t add any other fruits except lemons. If the juice is too sour or dirt, consider pushing a few carrots or apples onto the juicer. If you are sensitive to the warming/spicy quality of ginger, add a smaller amount first and start from there.

About 8 oz

You will need

2 medium beets, clean scrub, top trim

1 medium seedless cucumber, rinse, e.g. hothouse or English

1 inch long fresh ginger, scrub it

1 medium lemon

    1Cut the beets, cucumbers and ginger into small pieces and slice their small pieces into thin slices to easily pass through the juicer.

    2Cut the yellow peel from the lemon, leaving most of the white pulp and lemon meat behind. Slice the lemon and remove any seeds. Set half of the lemon aside.

    3Turn on the juicer and push everything away, alternating between beets, cucumbers and lemons.

    4Stir the juice and flavor when everything except the reserved lemon is juiced.

    5If needed, add the remaining lemon. If the juice is too sour, consider adding a few scrubs, unstick carrots or a small apple.

  • storage: Fresh beet juice is available soon after juicing, but you can make it a day or two in advance. Store in glass, sealed container. If you use a cold-press juicer, it should last for a day or two.
  • How to make beet juice without a juicer: To make beet juice in a blender, add all the prepared ingredients to a high-power blender such as Vitamix and stir until smooth. Then, press the pulp through a fine mesh filter to separate the juice from the pulp. A juicer makes better juices and wastes less, but this will bring you very close.
