  • Skill Level: Too simple! Just mix, stir and cook the rice.
  • Flavor Promotion: Cut a gap along the vanilla pods and scrape the seeds to add extra vanilla flavor.
  • Prepare in advance: Make pudding in advance! It cools nicely in the refrigerator and tastes even better after a few hours.
  • Suggestions: Top with whipped cream, fresh berries or sprinkle with cinnamon or chocolate shaved. As a top-notch, seasoning or cake layer filling, it’s also great.

Ingredient tips

  • milk: I use whole milk, but any type (including non-dairy) works fine.
  • Corn starch: Corn starch thickening pudding.
  • sugar: Use granulated sugar.
  • vanilla: Vanilla beans or vanilla bean paste can be used instead of vanilla extract. If using beans, slice them thinly and scrape the seeds off.

Variations: Keep this foundation formula on your hands and change the flavor by adding other extracts like banana, lemon, orange, coconut or maple.
