Homemade Baked Granola Bar Recipe

Forgot to shop for it! Here’s how to make delicious baked cereals at home! These homemade bars are rich in ingredients, are easy to make and taste incredible!

We love making granola bars here! These granolas are absolutely delicious thanks to the baking. We mixed some of our favorite ingredients with some sugar and honey. Then, as the bars bake in the oven, the sugar melts and caramels into bars, while the oat and nut toast and become more nutty.

These turned golden, roasted, just a little chewy. They are more heart-warming than our softer, more durable, and non-grilled granola bar. I pack more goodies into it, so they are thicker. I love these baked bars and give them an advantage on baking-free recipes. That said, my youngest son loves bars without grills, so you should look at both to see which style is best for you. If you like peanut butter, we also have these peanut butter granola bars (I tell you we like to make our own!).

Key Ingredients

  • oat: We use oats in these bars in two ways. First, you will add a lot of curled oats to the mixture, and second, you will use oat flour or finely ground oats to help make up for the glue that holds these bars together.
  • Sweetener: I use coconut sugar (or granulated sugar) and honey (or maple syrup) in these bars. The sugar melts in the oven and helps to bond the sticks together. Honey helps too, but for the most part, it has a little sticky and flavor. Over the years, I’ve reduced the sugar in these bars. If you prefer a sweet bar, add some chocolate chips or add a few tablespoons of sugar.
  • Nuts and Seeds: I like to add healthy nuts, but I prefer to chop them up before adding them. After doing it many times, I noticed that if they crash, they sit with larger nuts or dried fruits where they do it. So, by finer nut chopping, we can minimize the crash. I love walnuts, pecans, thinly sliced almonds, pumpkin seeds, dried coconut and flax seed meals. The options are endless!
  • dried fruit: Just like nuts and seeds, we want to chop fruit. I love dried cranberries, but other fruits like raisins, golden raisins, apricots and figs are also great.
  • Almond Butter: Instead of peanut butter, cashew butter or sunflower seed butter. This helps to make the glue that holds our bars together. When I have on hand, I love homemade almond butter.
  • Olive oil or melted butter: I used olive oil in the bar in the photo, but the butter works the same! Coconut oil is also an option!
  • Egg: Initially, I didn’t add an egg to this recipe, but over the years, I started and didn’t plan to look back. It helps the bars hold together and gives them more moisture, resulting in a slightly chewy stick. You can replace it with flax eggs.
  • Vanilla, salt and cinnamon: These make our bar taste great. Feel free to use your favorite baking spice mixture, such as apple pie spice or pumpkin spice.
How to make baked cereal: Mix oats with nuts, dried fruits, honey and olive oil

These baked granola bars are really simple and you can make them at home. You mix the wet ingredients until smooth and then pour them into a bowl with oats, nuts, fruits and sugar. Make sure everything gets really good and push it all into the baking tray. Strongly wrap it there and bake in the oven until light golden around the edges. Simple, good for you, delicious!

My family loves these grilled granolas (especially me). They turned into a lightly baked, hearty flavor. Feel free to exchange your favorite nuts, seeds and dried fruits.

One note: Like many homemade granola bars, they can break down when cut. A complete cooling bar (or even cools) helps you get a clean edge when cutting. Also, chop the nuts and dried fruits when they are dried. The bigger the block, the greater the chance that the bar will collapse a little. So it helps to chop everything up before adding the granola mixture! I use the mixer for the nuts and pulse a few times before adding them. Finally, if they do crash on the edge, you can usually push them back together!

Make 12 to 16 bars

You will need

1½ cups (160g) vintage rolled oats

1/3 cup (35g) old-fashioned rolled oats, groundor 1/3 cup oatmeal powder

1/3 cup (65g) coconut sugar or granular sugar, which can increase to 1/2 cup (100g) for sweet bars

1/2 teaspoon sea salt

1/4 teaspoon ground cinnamon

3/4 cup (85g) chopped nuts, such as walnuts or pecans

1/4 cup (30g) pumpkin seeds, unsweetened dried coconut flakes or combination

1/2 cup (70g) chopped dried fruit

2 tablespoons flax seed meal or flax seeds

1/4 cup (65g) almond butter, peanut butter or sunflower butter

1/4 cup (85g) honey or maple syrup

1/4 cup olive oil or melted butter

1½ teaspoons vanilla extract

1 tablespoon water

1 large egg or flax egg

direction

1Preheat the oven until 350°F (180°C) Grease and line the 9×9-inch square baking sheet with parchment paper, leaving a dangle on both sides to make removing the granola bar easier.

2In a large bowl, mix rolled oats, finely ground oats, sugar, chopped nuts, pumpkin seeds, dried fruits and flax seeds.

3In a separate bowl, whisk almond butter, honey, olive oil (or melted butter), vanilla extract, water and eggs until well combined. Pour oats into a bowl. Mix until thoroughly coated.

4Transfer the granola mixture to the prepared baking dish and press it down. Use a piece of parchment paper placed on top of the granola mixture to wrap it firmly into the pan. The better you pack it there, the better the bar will be later.

5Bake the strips for 25 to 30 minutes, or until the edges turn light golden and have a little color on the top. Remove from the oven and cool in a pan to room temperature.

6Remove from the pan and cut into strips or squares. A serrated knife or a heavy-duty chef’s knife is helpful. If the bar is a little broken for you, let cool for about an hour and try again. I found these broken slightly, but only in places with larger nuts or dried fruits, which you can usually push back to the bar.

Adam and Joanne’s Tips

  • storage: Place these rods in an airtight container at room temperature for 1 week, or freeze them! They keep fresher in the refrigerator, especially when wrapped separately and placed in a freezer bag. You can delete them as needed and they last up to a month in the refrigerator.
  • sugar: As written (with 1/3 cup), these bars are not too sweet, but not as sweet as many general store-buyed bars. For sweeter bars, increase the sugar to 1/2 cup or more. Or, add the chocolate chips to the granola mixture.
  • Chocolate Chips: If you add chocolate, I prefer mini chocolate chips, the reason is that I prefer chopped nuts (the bars can hold together better).
  • The nutrition facts provided below are estimates. Let’s assume olive oil.
