These tacos are rarely smoked, a little spicy, and even a little sweet – we crave everything in the recipe!

How to make vegetarian tortillas with sweet potatoes and black beans
These vegetable tacos are quickly blended together. We love sweet potatoes, but you can also make them with roasted butternut squash.
First place the sweet potatoes in the oven – roast with olive oil, cumin, salt and pepper until golden brown and sweet.
You can make salads when the potatoes are roasted. Very simple. Mix the cabbage with lemon juice, sour cream and chili sauce. Chipotle adds smoky heat.

For some proteins, we add black beans to the tacos. Just cook with some olive oil and garlic. When you’re ready for sweet potatoes, add something to warm the tortillas and enjoy.

These vegetarian tortillas quickly blended together. Sweet potatoes can be roasted in advance and baked in the refrigerator for a few days.
Make 4 servings
You will need
2 medium sweet potatoes, peeled and cut into 1/2-inch pieces
1 1/2 tablespoons super power olive oil
1 teaspoon ground cumin
1/4 teaspoon sea salt
1/3 cup sour cream
1 to 3 tablespoons chopped chipotle chili peppers with chili sauce
2 tablespoons fresh lime juice
2 cups chopped cabbage
2 cloves of garlic, chopped
1 (15 oz) black beans, drained and rinsed or 1 1/2 cup cooked black beans
8 small corn tortillas, warm

1Heat the oven to 400 degrees F. Paint a large baking tray with foil or parchment.
2Add the sweet potatoes to the baking tray with 1 tablespoon oil, cumin and salt. Try until the coating is sufficient. Arrange the sweet potatoes in a layer, then bake once, turning once, until the edges turn golden and tender for 25 to 30 minutes.
3Meanwhile, mix sour cream, 1 tablespoon lemon juice and 1 tablespoon chili pepper. Taste and adjust as needed with more Chipotle. Add cabbage and toss. Let the salad sit until the cabbage is slightly wilted, 10 to 15 minutes.
4Heat the remaining olive oil over medium heat about five minutes before serving. Add the garlic and cook while stirring until the toast starts, about 1 minute. Add the black beans and cook, stirring occasionally, until thoroughly heated. Remove from heat and add a second tablespoon of lemon juice.
5Make tacos by adding sweet potatoes, black beans, salad and coriander leaves to the warm tortillas. Serve with lime wedges.
