Grilled zucchini recipe with feta cheese

This grilled zucchini with feta and dill is better than I thoughthonestly, I can’t stop doing this. Our recipes are fast, simple and incredible!
Our simple grilled zucchini recipe, garnished with feta and dill, can keep me from stopping making delicious and healthy side dishes! We will bake the zucchini with a high oven temperature to make it soft but not mushy or moist. Grilled zucchini are already delicious, but in this recipe you will add garlic, feta and dill to take it to the next level!
I bet once you try this recipe you can repeat it! That happened to us and I wasn’t angry about it! So far, this is one of my favorite zucchini recipes on my blog! For more zucchini inspiration, see our quick stir-fry zucchini, or to give it a try, I highly recommend our latest zucchini salad!
Key Ingredients
- squash: I like to use medium zucchini when baking and find that the bigger they are, the more “soft” they are and “soft”. Looking for a firm zucchini that fits this recipe with smooth skin.
- olive oil: I love the taste of olive oil in this recipe, but feel free to exchange your daily cooking oil. Avocado oil is great!
- garlic: We roast zucchini with a little crushed garlic, which means you get a kick of garlic. I use a clove, but can add as much as you like.
- Feta and dill: The grilled zucchini is lovely in itself, but we brought this recipe to a notch with feta and fresh dill. I really can’t do it! Goat cheese and even mozzarella are great alternatives. You can save dill or replace it with another fresh herb such as chives, parsley or basil.
How to Make Grilled Zucchini with Feta Cheese
Keep this in mind when grilling zucchini: use high heat! To prevent wet zucchini, I grilled zucchini in one 425°F oven. Or, if you feel bold, do 450°F and bake for a few minutes.
If your oven has settings, using convection is a good idea. We won’t change the oven temperature; instead, we watch the zucchini and assume that it takes a few minutes less to finish baking.
I cut the zucchini into pieces as a recipe for this roasted zucchini and don’t peel it. (The peeled zucchini turned mushy and lacked tightness.)

I roast them in the oven with garlic and olive oil until I see some brown spots start to appear. Then I tossed some feta and cut the baking sheet for a few minutes and cut it into minutes to make it hot. Finally, I spread it on fresh dill and enjoy!

You will need
1¼ lb (566 g) zucchini, 2 to 3 medium
2 tablespoons olive oil
1 clove garlic, chopped
1/4 teaspoon fine sea salt
1/4 teaspoon fresh black pepper
2 oz (56g) feta cheese
1 tablespoon chopped fresh dill
direction
1Preheat the oven until 425°F (218°C). Prepare the baking tray (we bake zucchini directly on the baking tray, but to clean it easily, put down the silicone baking tray or a piece of parchment).
2You can cut zucchini in any way you like. You can cut it into 1/4-inch rounds, cut it into half a month or cut it into bite-sized pieces.
3Add zucchini to the baking dish. Sprinkle olive oil, garlic, salt and pepper on top. Toss well and sprinkle the zucchini into a layer.
4Grill the zucchini until they are tender and pick up for 15 to 20 minutes.
5Remove the baking tray from the oven, stir, and then crush the feta cheese onto the zucchini.
6Bake for another 5 minutes.
7Top with fresh dill.
