If using Russian or baked potatoes, peel them. Cut the potatoes into ¾ inch pieces.

In a 6QT slow cooker, add potatoes, ham, onion, carrots, ham, thyme, parsley and 1/2 teaspoon salt and pepper. Pour the broth.

Cook at lows for 7 hours or 3 hours high, or until the potatoes are tender.
