Mixed Berry Baked Oatmeal – Barefoot in the Kitchen

Berry Baked Oatmeal
This oatmeal recipe is not too sweet, allowing the umami flavor of the berries to shine through. Berries are a mainstay in my refrigerator. We eat them plain most of the time, but they also make a great addition to countless recipes.
One day I had some stuff that needed to be used up and baked oatmeal sounded like the perfect way to make sure the berries didn’t go to waste. I love the convenience of baked oatmeal for an easy breakfast to prepare in the morning.
Baked oatmeal will keep in the refrigerator for several days. And it reheats perfectly in the microwave. I like to add a tablespoon or so of water to my cold oatmeal to help it evaporate and soften a bit as it warms. My kids like their baked oatmeal a little crispier on top, so they skip the water.
I try not to add too much sugar when making oatmeal. When serving, if the finished oatmeal needs sweetening, just sprinkle it with a little honey or maple syrup to easily sweeten it for your taste.

My youngest son loves oatmeal so much that for a while he was trying to order it at almost every restaurant we went to. There’s nothing better than watching the waiter’s face when your kid asks for “a big bowl of oatmeal, please.” Luckily, he loves chips and salsa almost equally, so it’s easy to distract him.
Berry Oatmeal Bake
This recipe requires the following ingredients:
- Old Fashioned Oats
- brown sugar
- baking powder
- cinnamon, ginger and salt
- Cream, eggs and milk
- Strawberries, raspberries, blackberries and/or blueberries
Berry Oatmeal
To make the oatmeal, stir together the oats, brown sugar, baking powder, salt, cinnamon, and ginger in a large mixing bowl.
Add melted cream, eggs and milk. Mix well. Gently stir in berries and almonds, if desired.
Pour into prepared pan and bake for 26-30 minutes, until a knife inserted comes out clean. Let cool for about 10 minutes before serving.
Freezer Meal Instructions: Let the oatmeal cool completely, then cut or scoop into small servings. Store oatmeal in an airtight freezer-safe bag or container. Heat a tablespoon of water in the microwave.
