Pumpkin Baked Oatmeal – Barefoot in the Kitchen

Roasted Pumpkin Oatmeal is one of our favorite breakfasts; my kids would happily eat this every morning all fall long if I let them.

It’s amazing how oatmeal changes as it bakes. Almost cake-like but not quite as sweet, it’s a hearty breakfast treat we all love.

This Pumpkin Baked Oatmeal has been our go-to Thanksgiving breakfast for the past few years. I’m all for anything that makes my holiday kitchen tasks easier.

There are enough other cooking activities during the holidays that a simple breakfast is ideal. This hearty oatmeal breakfast bake is so easy.

I stir the ingredients together the night before and put the pot in the refrigerator until morning. About an hour before we want to eat breakfast, I give the oatmeal a quick stir in the pan and place the cold pan in the preheated oven.

The house smells wonderful as the oatmeal bakes, and this breakfast puts a smile on everyone’s face as we prepare our Thanksgiving meal for the day.

When it comes to oatmeal, my family is business. We eat oatmeal for breakfast multiple times a week and I’ve come up with lots of variations on a regular bowl of oatmeal to keep things exciting.

This recipe uses real pumpkin puree and tons of pumpkin pie spice to turn ordinary oats into a hearty breakfast that’s sweet enough to make everyone happy.

If you happen to have pumpkin pie spice mix on hand, you can substitute 2 teaspoons of pumpkin pie spice mix for the cinnamon, nutmeg, cloves, and ginger in this recipe.

The raisins are a fruity complement to the chewy oatmeal and remind me of some of my favorite oatmeal raisin cookie recipes. (But if you hate raisins, you can skip them without affecting the end result.)

It’s become a tradition for us to eat this on Thanksgiving morning, but we’ve also been known to enjoy a batch of roasted pumpkin oatmeal on any regular day we like.

Pumpkin Pie Baked Oatmeal

I like to make this meal into an overnight oats recipe by mixing all the ingredients together the night before. Pour the oatmeal into a baking dish, place in the refrigerator, and pop in the oven the next morning. As easy as (pumpkin) pie.

Baked oatmeal is packed with nutmeg, cinnamon, and cloves, which will make your kitchen smell like pumpkin pie heaven while baking. Every time I put this in the oven, everyone eagerly comes into the kitchen asking what’s being baked.

This baked oatmeal recipe also freezes well. After the oatmeal is baked, scoop it out of the pan and portion it into individual portions to store in the refrigerator. Reheat the toasted oatmeal in the microwave with a tablespoon of water.

Roasted Pumpkin Oatmeal

I like to make a big batch of baked oatmeal on the weekend and keep the leftovers in the freezer for the following week. Everyone can whip out a box of oatmeal at any time. It sure makes busy weekday mornings less stressful!

Roasted Pumpkin Oatmeal tastes great on its own. My kids and I love having a dollop of vanilla bean whipped cream on top. Honestly? Prevent screen from dimming

  • Preheat oven to 350°F. Grease an 8-inch square or 8×10 baking pan.

  • Add eggs, pumpkin puree, olive oil, milk and vanilla extract. Stir until well combined. Pour oat mixture into prepared pan.

  • Bake for 30-40 minutes, or until a knife inserted into the center comes out mostly clean. Let the oatmeal cool for at least 5 minutes before slicing and serving.

2 teaspoons of pumpkin pie spice mix can be substituted for the cinnamon, nutmeg, cloves, and ginger in this recipe.
This is a great overnight breakfast recipe. Everything can be stirred together the night before, poured into the pan, and kept in the refrigerator overnight. when you wake up, Quickly stir in the oatmeal, then Move the cold pan to the oven. Allow an additional 10 minutes of baking time.
