Queso Fundido -Barefeet Kitchen

Queso Fundido is a true cheese lover’s dream. Can you imagine something more tempting than a skillet filled with bubbles of hot cheese and spicy sausage, topped with fresh coriander and green onions with tortilla slices? Of course I can’t!

Queso Fundido

This is the dish that my guy sees on the menu almost every time. It’s not hard to see why when you realize it’s basically a skillet filled with melted cheese and brown sausage!

Of course, there is more. You want to choose the meltiest cheese for your recipe.

What is Queso Fundido?

We prefer to use freshly ground Queso Quesadilla cheese. If you have a hard time finding Queso Quesadilla cheese at the grocery store, then you may be able to find “Quesadilla Melted Cheese” which have been chopped in the bag.

Usually a mixture of Jack, Chihuahua and Oaxaca cheese. If you can’t find either, you can definitely grab some Jack cheese and some chihuahua and/or Oaxaca cheese and grate yourself. Any option works here.

It is important to note that it is best to tilt immediately before serving. It won’t be that cute when reheated, so this recipe isn’t a huge candidate for planning leftovers.

Queso Fundido Recipe

To make this glorious dip you need the following ingredients:

  • sausage
  • Queso Quesadilla cheese
  • Optional but delicious: coriander and green onions

In my opinion, the best skillet for that job is – a cast iron skillet or a heavy duty stainless steel skillet. The reason for this is that it moves seamlessly on the top of the chef where the cheese melts between your sausage brown and the oven.

The heavy pot is also a benefit here. It retains heat and keeps your immersion at a good temperature to keep it longer than a lighter, thinner pot.

Queso Fundido Con Chorizo

To dip your cheese in “Con Chorizo” (with sausage), first preheat the oven to 400°F.

In a thick-bottomed skillet in the oven, cook the sausages over medium-high heat. Stir to break it down while cooking.

The cooked sausage still looks a little wet, but will turn brown. Remove from the stove.

Chopped or crushed cheese. Sprinkle cheese over the meat in the pan and place it in the oven. Bake for 6-10 minutes until completely melted and bubbling.

Sprinkle with cilantro and/or green onions and then serve with tortilla slices.
