Simple Apple Pie Cupcake Recipe

These apple pie cupcakes are very simple and delicious. We use store-bought cinnamon roll dough as a base, fill with apple pie filling and top with crumbs. These are so good!

These Apple Pie Cupcakes are outrageous! We shared them first few years ago, but I’m still in love. You will use the store-bought cinnamon roll dough as a base and then make the cupcakes from there.

Key Ingredients

  • Cinnamon Dough Dough: I use a store-bought refrigerated cinnamon dough for these. However, you can use a homemade cinnamon dough dough dough!
  • apple: I love the crispy, sweet apples when making apple pie, so I use the same variety here. Granny Smith, Honeycrisp or Fuji are all good choices.
  • Brown Sugar and Cinnamon: For apple filling, I use the cinnamon apple recipe, but use brown sugar, cinnamon and a little lemon juice.
  • top: I love a good crushed filling, these apple pie cupcakes are the perfect place to use it. Making it with butter, flour, brown sugar and chopped nuts is easy.

I call these warm cinnamon spice cakes with a gooey apple pie and let me tell you, they are! First, you will slap the cinnamon dough to make the bottom of our cupcakes. I just slapped the dough into the cupcake with my fingers.

For the irresistible apple pie filling, melt the butter in a skillet until bubbled, and throw in the chopped apples. After about 5 minutes, they will start to soften. At that time, you’ll stir brown sugar, cinnamon and a little salt. Cook until the apples are tender and squeeze with lemon juice.

Fill the apples between cupcake cups and top with butter, crumbled nuts. These cupcakes bake in just 12 minutes! Serve them with a scoop of vanilla ice cream, whipped cream or drizzle caramel sauce. They are so nice!

We made apple pie cupcakes from store-bought cinnamon rolls that have been flattened into discs and placed in cupcake cups. We then fill them with cooked apples and top with crushed filling. They are very good!

Make 8 cupcakes

You will need

Apple Pie Cupcakes

1 Can refrigerate cinnamon roll dough (8 counts)

2 tablespoons unsalted butter

2 large apples, peeled, carcass and diced to 1/4-inch cubes

2 tablespoons brown sugar

1/2 teaspoon ground cinnamon

1/8 teaspoon salt

Half lemon juice

Whipped cream, ice cream or caramel sauce


Crashing toppings

2 tablespoons unsalted butter

1/4 cup all-purpose flour

1/4 cup brown sugar

1/4 cup chopped nuts

    1Preheat the oven until 400°F (204°C). Gently spray 8 regular-sized muffin cups with cooking spray.

    2Divide the cinnamon dough into 8 rolls. Roll each into a 4-inch circle and place it into each prepared muffin cup.

    3Make the apple pie fill. Melt 2 tablespoons butter over medium heat. Add the apples and cook, throwing occasionally until they start to soften for about 5 minutes. Stir 2 tablespoons brown sugar, cinnamon and salt. Cook for another 5 minutes or until tender. Add lemon juice.

    4Make crushed fillings. Add flour, brown sugar and nuts to a medium bowl. Cut the butter into small pieces and add it to the bowl. Add butter to flour and sugar with your fingers or fork until crumbly.

    5Spread the apples between 8 cups of cake and place the apples on the crumbs.

    6Bake the cupcakes for 10 to 15 minutes, or until bubbled and light brown on top. Cool in the pan for 5 minutes and transfer to a cooking rack. Serve cupcakes with whipped cream, ice cream or drizzle caramel sauce.
